Hot Apple Cider
10 Granny Smith apples, quartered
4 cinnamon sticks
pinch whole cloves
1 tbsp allspice berries
enough water to cover
Wrap all the spices in a small piece of doubled-up cheesecloth. Tie securely.
Add apples, sugar, spice pack and water to a large pot. Boil for one hour.
Lower the heat and simmer for another two hours.
Remove from heat and cool, removing the spice pack and discarding it.
Strain the remaining mixture through a fine mesh sieve (you may need to strain it several times).
Reheat and serve with whipped cream and an apple chip.
Put it in your favourite mug and enjoy!

Preheat oven to 100°C.
Line a baking tray with parchment paper and arrange the apple slices on the tray.
Mix sugar and cinnamon in a small bowl.
Sprinkle the cinnamon-sugar mixture over the apples.
Bake for two hours, moving the slices with tongs half way through to prevent sticking.
Remove from oven and cool before serving.
